New York Street Chicken Inspired Meal!! YUMMM

       So, my husband is in the military and he went up to New York with his command awhile back and bragged about how good the food he had was.  There was one meal he saw in the streets of manhattan that he wanted to try but his belly could no longer handle anymore food since he consumed so much.  He had new york pizza, new york street hot dog with some fancy schmancy toppings he wouldn't have dared to try at home, and he had to nerve to send me a picture of a lobster tail pastry he indulged at the Cake Boss Cafe (well he asked me what he should try and I told him I always wanted to try a lobster tail, he tried one and sent me a pic), this diabetic mommy was jealous.
       Well he messaged me and told me he wanted me to try to make this chicken meal he saw while walking the streets of manhattan.  I was like "well what kind of chicken is it, what do I need."  His reply "I have no idea what kind of chicken it was but it looked and smelled good, oh and it had lettuce and tomatoes on the plate too."  So I come and google street chicken new york and saw many pictures and different ways to try to prepare this meal.  It looked good and also had tons of different kinds of spices and ingredients that I do not have in my spice cabinet (like I am some kind of chef, I only recently began to cook meals for my family). Key to my meals are easy to prep, kid friendly, and diabetic friendly.  So hey let me come up with a way to try to get this done.

And Taaaahhh-Dahhhhh
 I bought some spices, and chicken thighs.  Here is what I used to make the marinade for my chicken:

6 chicken thighs, fat trimmed, cubed (you can use bone-in, but boneless will be easier to work with) * you can also substitute chicken breast tenderloins I used that during my first test batch
3/4 tsp adobo
2 tsp ground cumin
1/2 tsp ground coriander
1/4 tsp ground cloves 
3/4 tsp paprika
1/2 tsp curry powder
1 tsp minced garlic (not the dry kind)2 Tbsp lemon juice
3/4 cup greek yogurt
sea salt
freshly ground black pepper
3 tbsp olive oil
onion sliced lengthwise, thinly

Combine all the dry spices  in a bowl and toss, then add in the garlic, yogurt, lemon juice, onion and olive oil.  Then it looks like this pic below, it smells AWESOME!!

Then wash your hands (cause you are about to handle RAW chicken). Use a cutting board and either use a kitchen knife of scissors to cube the chicken.  I did more like rectangles.  Then place the chicken in a galloon ziploc bag.  Next wash your hands again because you just handled RAW chicken.

Add the lovely smelling marinade into the ziploc bag and try to get out as much
 air as you can and mix it all together to get all the chicken covered.


Let it marinate for a few hours or overnight. Then when you are ready to cook it get a large skillet and place a tablespoon or two of olive oil to cover the bottom and turn on the stove top and start the cooking!! Warm up the skillet just a tidbit then add your lovely chicken mixture into the pan. Stir the chicken every so often and keep an eye on it since it will cook fast since it was cubed.  You can cover the pan which will make it cook quicker but don't forget to stir.  You know its' done when the chicken starts to turn white and feel free to cut a piece to make sure inside is cooked well. It took mine about 15 minutes to fully cook through.


Well my husband also told me that the chicken also had a white sauce for the chicken and lettuce.  So I was able to fix up a yummy dressing based on my research. I used:

1 and 1/4 cup Greek yogurt
3/4 c. mayonnaise
1 Tbsp. salt
1 Tbsp. white wine vinegar ( red can also be used)
1.5 Tbsp. lemon juice (½ lemon)
1 Tbsp. olive oil
1 tsp minced garlic1-2 tsp dill (dry or fresh) 
1 tbsp cold water



Combine all these together!
 At the end I was able to cook some white rice and have shredded lettuce and tomatoes. I added the white sauce to the salad part of the meal.

This is my husbands favorite meal now.
The pic above is from the first time I attempted to make the meal.  I used chicken breast tenderloins.
